Peanut Butter Chocolate Chip Banana Bread

More often than not we end up with a few uneaten, really manky looking bananas. I’m a lover of the speckled brown banana but anything past that and I feel like I’m eating straight mush. So, like most people do, I’ve taken to using these bananas to whip up a banana bread.

Here’s the recipe I use (I will change the ingredient amounts depending on how many old bananas I have!):

  • 1/2 cup + 1 teaspoon butter
  • 1 cup brown sugar
  • 2 eggs
  • 4 mashed bananas (you can use 3 if thats all you have but 4 makes it MOIST…sorry)
  • 1.5 cups all purpose flour
  • 1 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1/2 teaspoon vanilla
  • 1 cup milk chocolate chips
  • 2 tablespoons all-natural peanut butter

Method:

  1. Preheat oven to 350
  2. Cream together butter and sugar
  3. Add in eggs, vanilla, and mashed banana, combine
  4. In a separate bowl combine salt, flour, and baking soda
  5. Combine the two mixtures together
  6. Add in chocolate chips
  7. Grease a deep, 9 inch pan (or two shallow ones)
  8. Pour in mixture, then drizzle the peanut butter on top into swirls
  9. Bake for ~1hour (if mixture is halfed, only cook for 25!)

Serve warm with butter of vanilla icecream, or cool as a snack with your morning coffee!
