More often than not we end up with a few uneaten, really manky looking bananas. I’m a lover of the speckled brown banana but anything past that and I feel like I’m eating straight mush. So, like most people do, I’ve taken to using these bananas to whip up a banana bread.
Here’s the recipe I use (I will change the ingredient amounts depending on how many old bananas I have!):
- 1/2 cup + 1 teaspoon butter
- 1 cup brown sugar
- 2 eggs
- 4 mashed bananas (you can use 3 if thats all you have but 4 makes it MOIST…sorry)
- 1.5 cups all purpose flour
- 1 teaspoon baking soda
- 0.5 teaspoon salt
- 1/2 teaspoon vanilla
- 1 cup milk chocolate chips
- 2 tablespoons all-natural peanut butter
Method:
- Preheat oven to 350
- Cream together butter and sugar
- Add in eggs, vanilla, and mashed banana, combine
- In a separate bowl combine salt, flour, and baking soda
- Combine the two mixtures together
- Add in chocolate chips
- Grease a deep, 9 inch pan (or two shallow ones)
- Pour in mixture, then drizzle the peanut butter on top into swirls
- Bake for ~1hour (if mixture is halfed, only cook for 25!)
Serve warm with butter of vanilla icecream, or cool as a snack with your morning coffee!
