Bacon Wrapped Chicken Recipe

Not just a slab of unseasoned chicken breast wrapped in a few strips of bacon. No, no, no. This is more than that. This is perfectly seasoned MOIST chicken encased in a crispy layer of sugar glazed bacon.

Anyway, this chicken is damn good. I’m sure we’re not the only household that always seems to have chicken and bacon in our fridge/freezer along with a plethora of random spices and seasonings in the cupboard? What I love about this recipe is that pretty much every house has the ingredients to it. It’s not going to take a grocery trip and searching around the speciality aisle to find what you need. If you’ve read my recipe posts before, you’ll know that I’m about SIMPLE, EASY, AND YUMMY – and that’s exactly what this meal is.

This recipe serves 2, but feel free to double/triple the recipe to account for any extra people!

What you’ll need

  • 1 large chicken breast
  • 4-6 rashes of streaky bacon
  • chicken seasoning (see below)
  • 1.5 tbsp brown sugar
  • olive oil (optional)

For the seasoning:

  • 1 tsp garlic powder
  • 1.5 tsp chilli powder
  • pinch of black pepper
  • 1/2 tsp salt
  • 1 tbsp flour

What do do with said ingredients

  1. Preheat oven to 390F and line a baking dish with tin foil, set aside.
  2. In a medium sized bowl, make the seasoning for the chicken.
  3. Cut your chicken breast in half, lengthways, and coat in the seasoning, shaking off any excess.
  4. Wrap a rash of bacon around the strip of chicken from tip to tip – usually a second rash is required to finish wrapping the whole strip! Lay flat on the tin foil lined baking dish, and repeat on your other strip.
  5. Take the brown sugar and rub it into the bacon wrapped chicken, drizzle with olive oil afterwards as well if you wish, this will crisp the bacon up a little more when cooking!
  6. Pop it in the oven for ~25-30mins – if you want the bacon to be a little more crispy, throw the broiler on for a few minutes before taking the dish out of the oven!

Serve with whatever you like! We had homemade potato fries and corn.
